If you want to change the number of spaces between sentences, there is a preference option that controls the number of spaces after sentence ends.

For example, if you want to change the number of spaces between sentences to one (1) space:

The above only affects typing NEW material. If you want to change the existing double-spaces to single spaces:
- Use the Edit>Find menu command
- Type two spaces in the "Find what:" text field
- Type a single space in the "Replace with" text field
- Select the Entire Document option
- Make sure the Keep Capitalization checkbox is checked
- Press the Replace All button
